I thought I would share one of our favorites:
Sesame Carob Fudge
(from the Yeast Connection Cookbook)
Mix: 1/2 cup honey with 1/2 cup peanut butter (prefferably natural), and set aside.
Then blend together: 1/2 cup almonds powder (or nut of your preference), 1/2 cup pumpkin seeds choped, 1/2 cup unsweetened coconut, 1/2 cup carob powder. 1/2 cup sesame seeds (minus 2 Tbs which ar placed in a small saute pan).
After mixing dry ingredients together add the p-butter/honey (warming the honey slightly helps it to be easier to mix up).
Push them down into a small cake pan, or any dish of your choosing. Then brown the sesame seeds a little and spread them over the top of the fudge. Cool it in the fridge or freezer to let it harden.
This stuff is yummy!!! My kids LOVE it and its pretty healthy if you dont mind using honey! Im sure if honey is a problem you could substitute it with something else.
